Goppion, with other ten Coffee Roasters, is part of CSC® – Certified Speciality Coffee – since 1996.
This Association was established thanks to the expertise and determination of its members who intend to find top quality coffees all around the world. CSC® aims at raising awareness and promoting the culture of quality coffee, thus strengthening the value of the selection, a legacy of the history of these Coffee Roasters.
After frequent travels to the plantations and meetings with their producers, CSC® has selected thirty plantations worldwide; its member Coffee Roasters can purchase from these plantations based on their taste to then create their own blend or valuable Single Origins.
Among the plantations selected by CSC®, there is Finca El Hato in Barberena, just a few kilometers away from Guatemala City in the Santa Rosa region.
Christian Rash is the owner of this plantation located at 1200 – 1450 meters above sea level.  He is constantly looking for the best selections and carries out tests on the botanical varieties that guarantee the finest acidity and an increasingly sweet taste to his coffees, but especially resistant to major diseases.  In particular against la roya (“the rust” in Spanish), or coffee leaf rust, that is a fungus whose urediniospores are carried by the wind and attacks the leaves of coffee plants causing major harm.  The leaves tend to fall from the plants which in their effort to grow them back, become weaker and no longer able to produce berries, and thus deteriorate.
The landscape is beautiful, varied, very natural and the plantations are often shaded. The soil is fertile and rich in clay particles.
Coffee is all hand-picked to guarantee that only ripe berries are harvested; coffee beans will then undergo the wet processing and be dried in the sun on patios. We really appreciate this coffee as it confers to our CSC® Caffè di Piantagione cup zesty and flowery scents with a mild and fine acidity typical of the coffees grown in these areas.
